Berry Cordial

Berry Cordial
Ingredients
- 500 g fresh seasonal berries I used strawberries and black currants
- 1 handful fresh mint leaves
- 2 slices of lemon per jar/bottle
- 1 l water
- 150 g sugar
- 1/2 of one lemon juice
Instructions
- Sterilise your jars and lids by boiling them in hot water or putting in the 100C oven for 10 minutes.
- Wash and clean your berries.
- Fill the jars with 3/4 of the berry mixture.
- Add 3-4 mint leaves and 2 slices of lemon to each jar.
Syrup
- In a pot add water, sugar and lemon juice.
- Mix well and bring it to boil until the sugar is melted completely.
- Pour the syrup over the berries and close the jars immediatelly.
- Turn the jars upside down so the vacuum seal is formed.
- Let it cool down completely and keep it refridgerated for 4-5 months. Enjoy!
