Ingredients for Radish and Cannellini bean salad

Radish. Of course. It is the star of the salad. Use fresh crunchy radish here. You’ll have to cut them very thinly and it takes a little time, but I promise you the result is well worth the time!

Cannellini beans. They are packed with nutrients and protein. Benas add heartiness to the salad and make it more filling.

Spring onion. My favourite herb. As I said so many times before, it’s an absolute must to everything I eat. It just gives a super lovely flavour to the salad. And greens are always good in salads.

Dill. I am from a country where dill is the main herb in all the dishes. And I love it! With radishes dill is super yummy and gives this unique flavour.

Olive oil. You’ll need good quality olive oil here. The dressing is very simple for this salad and if the olive oil is not good it can ruin the taste of the salad.

Lemon juice. Of course my favourite add to the salad is always lemon. I like the sourness of the juice and it also makes a lovely marinade for the radishes.

Balsamic vinegar. Adds a different flavor to the dressing and just makes everything beetter.

Salt and Black Pepper. These are very simple and good old classic mixes of spices that go so well together with no exception here with radishes.

Ingredients
  

  • 300 g cooked Cannellini beans
  • 300 g fresh radish thinly sliced
  • 1 handful spring onion chopped
  • 1 handfull dill chopped

Dressing

  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • ½ of one lemon juice
  • salt and black pepper to taste

Instructions
 

  • Thinly slice your radish using a knife or a mandoline.
  • Chopp all the herbs.
  • Mix all the sauce ingredients into a bowl.
  • In a large salad bowl combine radish, cannellini beans, herbs and the dressing.
  • Mix well and let it marinade for 5-10minutes before serving so the flavors combine.
  • Serve it and enjoy!
