Who can resist delicious crispy homemade vegetable tempura? This radish tempura is crispy, delicious and amazing snack served with beautiful tahini, lemon and garlic sauce. As the radish season finally comes to the end I came up with this idea to make tempura. And I can tell you it seriously delicious and addictive.

The key for a crispy radish tempura

The key for perfect tempura is batter and the temperature of the oil. For the batter I like to use 1:1 water to flour ratio and it makes the perfect batter. I also like to spice up my batter with favourite spices such as salt, pepper, cumin and herbs. Another thing is that you have to mix the batter to get it as smooth as possible. Take your time and make sure there is no lumps in it. Also use cold water for the batter to have flufffy and crisp tempura.

What oil to use to fry tempura?

I like to use neutral flavour oil such as canola, sunflower, vegetable or grapeseed oil. Make sure you heat your oil before adding the tempura in properly. Also do not overcrowd the oil as its going to lower the temperature of the oil. Lastly, please pick up crumbs in the oil between batches. The burnt crumb will attach to your new tempura if you don’t pick them up, and oil will get darker once the crumbs become burnt and it leaves a bad flavor in the oil.

The dressing

My all time favourite dressing is tahini, garlic and lemon juice dressing. It’s as simple as that but yet so so good with everything, especially tempura. Use the same dressing for salads, or as a dipping sauce for fries. I also like to add a little water if the dressing is too thick.

  • 1 bunch fresh radish with leaves
  • 1 tbsp flour
  • cup water
  • ½ tsp each salt/black pepper/ cumin
  • neutral oil


  • 1 clove garlic
  • 1 lemon juice


  • Make the batter by combining flour, water and spices.
  • Cut each radish in half lenghtwise.
  • Preheat the cooking oil.
  • Dip each radish to a batter and fry in the hot oil until both sides are golden and crispy.
  • Meanwhile make the sauce combining all the ingredients.
  • Serve the tempura in the sauce and enjoy!
