This roasted pear and fennel salad is really what you need for the best roasted vegetable salad. I like the combination of flavours which goes super well here. The sweetness of the roasted pear and lemony herb dressing is just really amazing! You can eat it as a main or as a side dish with whatever you like.

How to make Roasted Pear and Fennel Salad?

It is super easy to make the salad. Simply just chopp the fennel and pears, add to a baking dish together with spices and bake in the oven. After that coet in lemony herb dressing which makes this dish so so good.

Fennel. I love it for its very unique flavour. Fennel has a very mild anise or licorice flavor that can be enhanced or sweetened depending on how it is cooked. I think it is not for everyone’s taste, but if you cook it right you will definitely enjoy the texture and flavour! It is also very very healthy. Fennel is used for various digestive problems including heartburn, intestinal gas, bloating, loss of appetite, and colic in infants.

Pear. It is an amazing and very versatile fruit. I love it for its sweetness. When you add spices to it and roast in the oven it tastes just so amazing. Pears are also super healthy for you. It is highly nutritious, promotes gut health, offers anticancer effects, also boosts the heart health, lowers the risk of diabetes and may even help with weight loss.

Lemony herb dressing. This is my favourite part of the dish. It is very easy to make and you will only need three ingredients here.

Roasted Pear and Fennel

This roasted pear and fennel salad is really what you need for the best roasted vegetable salad.

Cook Time 35 minutes
Total Time 45 minutes

  • 3 medium fennel
  • 3 sweet pears
  • 1 tbsp agave syrup
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp za'atar


  • ½ cup chopped parsley
  • 2 tbsp olive oil
  • ½ lemon juice


  • Cut the fennel greens and slice the fennel in wedges. Add to a baking dish.
  • Slice the pears in half or in quarters. Add to a baking dish.
  • Add olive oil, salt, agave and za'atar to the vegetables and bake in the preheated 200°C oven for about 35 minutes.
  • Mean while mix parsley, lemon and olive oil in the dressing.
  • Add the dressing on the cooked fennel and pears and enjoy!
