What are galic scapes?
Okay, so if you are a garlic grower like myself, you probably know and get so excited when the time comes to harvest these extra beautiful garlic scapes. Garlic scapes are basically unopened garlic flowers which you have to remove if you want your plant to spend energy on the roots. I always get so excited when I see first garlic scapes, they are full of amazing and diferent garlic flavour. Unfortunatelly garlic scapes are available for a very short period of time. But if you do grow garlic or you saw some scapes at the farmers market, do not hesistate to get them and try this beautiful and delicious garlic scape sauce.
How to make roasted squash with garlic scape sauce?
It is actually very easy to make. All you need is a squash. Peel it and chop into small cubes. Drizzle with olive oil and salt and za’atar seasoning mix. Then bake in the oven until they become slightly browned and fork tender.
For the sauce you will need a bunch of fresh garlic scapes, some tahini, lemon juice, olive oil and salt. That is it! So simple, just add everything to a food processor and blend until you get the desired consistency.
Serve the roasted squash cubes over the garlic scape pesto and enjoy this lovely dinner or lunch!

Roasted Sqush with Garlic Scape Sauce
Ingredients
- 1 small squash
- 2 tbsp olive oil
- 1 tbsp za'atar
- 1 tsp salt
Garlic scape sauce
- bunch garlic scapes
- 1 tbsp tahini
- ½ lemon juice
- 2 tbsp olive oil
- ⅓ cup pumpkin seeds
- ½ tsp salt
Instructions
- Peel and chop the squash into small cubes.
- Drizzle with olive oil, salt and za'atar and bake in the preheated 200C oven for about 30 minutes or until golden bron and for tender.
- Meanwhile add all the sauce ingredients to a food processon and blen until you get smooth consistency. Add a splash of water if needed.
- Serve the cooked squash over the sauce nad enjoy!
