Vegan “Tuna”

Tuna salad sandwiches were a mainstay in my diet when I was not plant based. It was also one of the first foods I gave up for ethical reasons. After reading about the dolphins being caught and killed in the tuna nets, I stopped eating it. Vegan tuna was also one of the first recipes I learned to make when I went meat-free. It’s super easy to make with chickpeas, and I also sometimes like to make it tofu.

Sometimes I like to have raw days of eating on my plant based lifestyle, just for detox! I’ve made these sunflower seed “tuna” wraps as a substitute for chickpeas and let me tell you it was shockingly soo good! i LOVED it and it’s definitely one of my favourite ways to make vegan “tuna” now!

HOW TO MAKE RAW VEGAN TUNA WRAPS MADE WITH SUNFLOWER SEEDS

  • First you place soaked sunflower seeds in your food processor, and process until they’re ground into small pieces.
  • Add the parsley, scallions, and dill and mix everything together.
  • Then you combine the mayo, mustard, lemon juice and capers and sunflower seed mixture in a large bowl.
  • Now you take a large lettuce leaf and make it flat on the surface.
  • Finally you place the sunflower seed mixture, some of the cucumber, carrots. Starting with the top edge that has the filling, carefully roll the lettuce le, as you would a tortilla, tucking the sides in as you roll.
