This Zucchini Cream Pasta is one of my family’s favorite recipes to make for summer! It is a creamy alfredo-like sauce but a lot healthier and lighter using zucchini and vegan cream. A creamy zucchini pasta sauce that is filled with simple ingredients and comes together in 10 minutes.It can feed you, your kids and anyone else you are cooking for.
What ingredients are in this zucchini cream pasta recipe:
- Olive oil– I really see the difference using a high quality oil here. Avocado oil could work too but I prefer a nice evoo.
- Garlic – fresh garlic cloves are best for flavor but you can use garlic powder too.
- Zucchini – this is such an easy way to get zucchini into anyways diet!! It adds the most nutrients yet not much flavor to the sauce.
- Onions – these are the best. I love using onions in my pastas and sauces.
- Fresh Parsley– LOVE adding this in for flavor!
- Vegan Cream– it adds such a creamy consistency like cream would except much healthier! I love to use alpro products here, as they are so realistic in taste.
- Salt and Black pepper – these are the only spices I like to use in this pasta sauce. Simple and delicious.
How to make it?
- Sauté the zucchini, Onion and, after a couple of minutes, the garlic in olive oil.
- Pour in the vegan cream, parsley, salt and pepper.
- Bring the cream sauce to a very gentle simmer—you never want to boil cream—for about 5 minutes.
- Boil the pasta of your choosing—but don’t forget to save a scoop of the pasta water before you drain it!
- Add the pasta water to the zucchini cream sauce and blend!
- Zucchini cream sauce + pasta = dinner is done!

Zucchini Cream Pasta

Ingredients
- 1 large zucchini
- 2 small onions
- 3 cloves garlic
- 3 tbsp olive oil
- 200 ml vegan cooking cream
- 1 bunch parsley
- ½ tsp salt and black pepper
- 1 tbsp pasta water for sauce
- 1 pack pasta of choice
Instructions
- Sauté the zucchini, Onion and, after a couple of minutes, the garlic in olive oil.
- Pour in the vegan cream, parsley, salt and pepper.Bring the cream sauce to a very gentle simmer—you never want to boil cream—for about 5 minutes.
