Lemon-Marinated Olives
Ingredients
- 1 cup mixed olives (green, black, kalamata)
- 1 lemon zest and juice
- 2 cloves garlic minced
- 2 tbsp olive oil
- 1 tbsp maple syrup
- 1 tbsp balsamic vinegar
- 1 tbsp chopped fresh parsley
- 1 tsp dried oregano
- ½ tsp chili flakes
- ¼ tsp salt
Instructions
- If your olives are very salty, rinse them briefly under cold water and pat them dry. Add to a small bowl.
- Combine the lemon zest, lemon juice, maple syrup, balsamic vinegar, garlic, olive oil, parsley,oregano, red pepper flakes (if using) and a pinch of salt.
- Mix the olives with the marinade evenly. Transfer the olives and marinade to a jar or airtight container. Let them marinate for at least 1-2 hours at room temperature, or preferably overnight in the refrigerator.
- Allow the olives to come to room temperature before serving. Garnish with a bit of extra lemon zest or fresh herbs if desired.
